Scaldare il latte meno 1/2 tazza con la buccia di limone e la cannella. mettere da parte. lavorare i tuorli con lo zucchero sbattendoli bene in una ciotola messa sopra un pentolino di acqua a bollore. lavorarli fino alla temperatuta di 55° circa o finchè siano ben gonfi. prendere il latte avanzato e usarlo per stemperare la farina di mais. filtrare il latte bollito e unirlo al composto di uova, mescolando con cura. aggiungere anche la farina di mais con il latte e mettere sul fuoco basso, mescolando come una crema. cuocere 15' circa sempre mescolando. è pronta quando non vedete più la schiuma. spegnere e unire il burro. far stiepidire e versare nella tortiera sopra la base di frolla. aggiungere anche l'uvetta messa a bagno in rhum e sgocciolata.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:verdana;color:#000066;"&gt;coprire con l'altro disco, spennellare di albume e infornare a 170° per 30' circa. sformare da &lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;250 g. di farina 00&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;1 tuorlo&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;140 g. di burro&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;100 g. di zucchero semolato&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;un'arancia&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;50 g. di zucchero di canna&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;cioccolato fondente&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;un pizzico di sale&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#330000;"&gt;lavorate il burro a crema con lo zucchero semolato, unite la scorza grattugiata dell'arancia e il suo succo, il tuorlo, un pizzico di sale e mescolate.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#330000;"&gt;aggiungete poi la farina setacciata e mescolate velocemente.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;"&gt;formate un cilindro del diametro di circa 5 cm., avvolgetelo in pellicola e lasciate in frigo per due ore.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;"&gt;toglietelo dal frigo, spennellatelo con parte dell'albume rimasto e passatelo nello zucchero di canna.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;"&gt;tagliatelo in tanti dischi spessi mezzo cm. circa che sistemerete in una placca da forno foderata di cartaforno, tenendoli distanziati uno dall'altro.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;"&gt;cuocete a 180° per 15/20'&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Verdana;"&gt;appena freddi,sistemateli su una griglia e decorateli con cioccolato fuso &lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-family:Verdana;color:#3333ff;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;/div&gt;&lt;div style="font-family:Trebuchet MS;color:#000099;"&gt;1 cipolla media&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;10 pomodorini&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;origano&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;15 olive di Gaeta&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;6 filetti di acciuga sott'olio&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;sale, olio, pangrattato&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;1 scatola da 180 g. di tonno al naturale&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;lessare le patate, eliminare la buccia e passarle con lo schiacciapatate &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;sistemarle in una terrina.&lt;/span&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;tagliare il peperone a striscioline e la cipolla a fettine sottili&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;versare 3 cucchiai di olio extravergine in un tegame, unire il peperone e la cipolla, coprire e cuocere a fuoco medio.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;dopo 5', aggiungere i pomodori divisi a metà, il sale e l'origano e &lt;/span&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;portare a cottura.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;condire le patate con sale, un giro d'olio, e il sughetto che si sarà formato dalla cottura delle verdure.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;completare con un uovo sbattuto e amalgamare bene.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;ungere il fondo di una teglia da 26 cm. cospargerlo di pangrattato e disporre metà dell'impasto di patate, schiacciando bene.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;aggiungere le verdure, le olive, i filetti di acciughe, il tonno ben sgocciolato.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;coprire con la restante metà delle patate, ungere con poco olio e passare in forno a 180°per 25' circa.&lt;/span&gt; &lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;servire tiepida&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Trebuchet MS;color:#000099;"&gt;il peperone può
